Ingredients

Dough

  • Nonstick cooking spray, for greasing
  • 1 ½ cups all purpose flour
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • 2 tsp cinnamon
  • ¼ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup no-sugar added applesauce
  • 1 ½ cups peeled and finely diced Honeycrisp apples (about 2 medium apples)

Glaze

  • 2 cups powdered sugar
  • ⅓ cup plus 2 TBSP apple cider or apple juice

Instructions

  1. Preheat and Prepare: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly spray a baking sheet with nonstick cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all purpose flour, baking powder, kosher salt, and cinnamon until well combined.
  3. Mix Wet Ingredients: In a large bowl, whisk the melted unsalted butter with granulated sugar. Then add the egg and whisk until combined. Stir in the vanilla extract and no-sugar added applesauce thoroughly.
  4. Combine Batter: Add the flour mixture into the wet ingredients and stir until the batter is fully combined. Gently fold in the finely diced Honeycrisp apples.
  5. Scoop and Bake: Using a tablespoon, scoop mounds of batter spaced a few inches apart onto the prepared baking sheet. Bake in the oven for 10 minutes until lightly golden.
  6. Prepare to Broil: Carefully remove the baking sheet from the oven and turn your broiler to high to prepare for glazing.
  7. Make Glaze: In a small bowl, whisk together the powdered sugar and apple cider or juice until smooth and pourable, slightly thin.
  8. Glaze and Broil: Brush a generous amount of glaze over each apple fritter bite allowing it to drip over the sides. Return the baking sheet to the oven under the broiler for 2 to 4 minutes, rotating every minute to ensure even caramelization. Watch closely to avoid burning.
