A creamy, flavorful Butter Chicken Skillet inspired by Texas Roadhouse, featuring tender chicken breasts seared to perfection and bathed in a rich butter sauce with a blend of spices, perfect for a quick and satisfying dinner.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts or thighs

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Other Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter, divided
  • ¼ cup chicken broth
  • ½ teaspoon lemon juice (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the chicken: Pat chicken dry with paper towels and season both sides evenly with garlic powder, onion powder, paprika, salt, and black pepper to infuse flavor.
  2. Heat the skillet: Place a large skillet over medium-high heat and add olive oil along with 1 tablespoon of butter, allowing it to melt and coat the pan.
  3. Sear the chicken: Add the seasoned chicken breasts or thighs to the hot skillet and cook for 5 to 6 minutes per side until they develop a golden crust and are fully cooked through (internal temperature reaches 165°F/74°C). Remove chicken from the pan and set aside.
  4. Make the sauce: Reduce the heat to medium and add the remaining tablespoon of butter along with the chicken broth to the skillet. Scrape the browned bits from the bottom to deglaze the pan, then let the sauce simmer gently for 2 to 3 minutes. Stir in lemon juice if using.
  5. Combine and finish: Return the cooked chicken to the skillet, spooning the buttery sauce over the pieces. Allow it to cook together for an additional 2 minutes to let flavors meld and chicken reheat.
  6. Garnish and serve: Sprinkle fresh parsley over the top if desired, and serve the dish hot for a delicious and comforting meal.

Notes

  • Use chicken thighs for juicier and more flavorful meat compared to breasts.
  • If fresh parsley is unavailable, dried parsley or cilantro can be substituted for garnish.
  • Adjust salt and pepper according to taste preference.
  • For a richer sauce, add a splash of heavy cream when simmering the broth and butter.
  • Ensure the skillet is properly heated before adding chicken to achieve a good sear.
