Louisiana Voodoo Fries are crispy baked French fries smothered in a creamy, spicy cheese sauce made from Monterey Jack and cheddar cheeses, seasoned with Cajun spices to bring bold, flavorful heat. Topped with fresh parsley, this indulgent appetizer or side dish combines savory richness with a Southern twist.

Ingredients

Fries

  • 1 (28 oz) bag frozen French fries (or homemade fries)

Cheese Sauce

  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 2 teaspoons Cajun seasoning (plus extra for garnish)
  • Salt and pepper to taste

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Fries: Preheat your oven to 425°F or set your air fryer to 400°F. Arrange the frozen fries on a baking sheet or in the air fryer basket. Bake or air fry for 25 minutes, turning halfway through, until golden and crispy.
  2. Make the Cheese Sauce: In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to create a roux. Slowly whisk in the heavy cream and continue stirring until the mixture thickens. Add the shredded Monterey Jack and cheddar cheeses, stirring until fully melted and smooth. Season with 2 teaspoons Cajun seasoning, salt, and pepper to taste.
  3. Assemble the Fries: Place the cooked fries on a large serving platter. Generously drizzle the warm cheese sauce over the fries. Sprinkle additional Cajun seasoning on top for extra flavor.
  4. Garnish and Serve: Sprinkle chopped fresh parsley over the fries to add color and freshness. Serve immediately while hot and gooey to enjoy the full experience.

Notes

  • Use homemade fries for fresher taste and customized cut sizes.
  • Adjust Cajun seasoning to control the spice level to your preference.
  • For a lighter version, substitute heavy cream with half-and-half, though cheese sauce may be less rich.
  • To keep fries crispy after assembly, serve immediately as cheese sauce may soften them if left too long.
  • Additional toppings like cooked bacon or green onions can add more texture and flavor.
