Instructions

  1. Prep the Tortillas: Preheat the oven to 375°F. Lay the low-carb tortillas flat on a clean surface. Spread about 2 tablespoons of marinara sauce evenly on each tortilla, leaving a half-inch border around the edges to prevent sauce from oozing out during rolling.
  2. Layer Cheese and Pepperoni: Sprinkle the freshly shredded mozzarella cheese evenly over the marinara sauce on each tortilla. Arrange the pepperoni slices evenly on top, slightly overlapping near the edges to avoid bare spots once rolled.
  3. Roll and Bake: Roll each tortilla tightly starting from one end without tearing. Brush the outside with olive oil to help achieve a golden, crispy crust.
