Ingredients

Soup Base

  • 6 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 medium potatoes, peeled and diced
  • 4 cups chicken broth

  • 1/2 tsp paprika

Dairy and Garnish

  • 1 cup heavy cream
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook bacon: Cook the chopped bacon in a large pot over medium heat until crispy, then remove and set aside, leaving the bacon grease in the pot.
  2. Sauté aromatics: In the same pot with the bacon grease, sauté the diced onion and minced garlic until they become soft and fragrant, about 3-4 minutes.
  3. Add potatoes and broth: Add the peeled and diced potatoes, chicken broth, salt, black pepper, and paprika to the pot. Bring the mixture to a boil.
  4. Simmer potatoes: Reduce the heat to a simmer and cook until the potatoes are tender, which should take about 15 minutes.
  5. Adjust texture: Mash some of the potatoes directly in the pot to create a thicker soup consistency while leaving some chunks for texture.
  6. Add cream and bacon: Stir in the heavy cream, milk, and half of the cooked bacon. Simmer the soup for an additional 5 minutes to combine flavors and heat through.
  7. Garnish and serve: Ladle the soup into bowls and garnish with shredded cheddar cheese, fresh parsley, and the remaining crispy bacon before serving.
