Ingredients

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 teaspoon ginger

Wet Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/4 cup water

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan to prevent the bread from sticking.
  2. Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger until evenly combined.
  3. Combine wet ingredients: In a separate large bowl, mix the pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and water until smooth and well blended.
  4. Combine wet and dry mixtures: Add the dry ingredients to the wet ingredients and stir gently until just combined. Avoid overmixing to keep the bread tender.
  5. Pour batter and bake: Pour the batter into the prepared loaf pan and spread evenly. Bake in the preheated oven for 70 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool the bread: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

  • Use canned pumpkin puree if fresh pumpkin is not available for convenience and consistency.
  • For added texture and flavor, consider adding 1/2 cup chopped walnuts or pecans to the batter.
  • Make sure not to overmix the batter to keep the bread moist and tender.
  • If desired, substitute vegetable oil with melted coconut oil for a different flavor profile.
  • Store the pumpkin bread wrapped in plastic wrap or airtight container to keep it moist for up to 3 days.
